- 3 cups oat-rice flour
- 1 teaspoon flax-seed meal
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup unbleached pure cane sugar
- 1/2 cup organic raisins
- 1/4 cup peanut oil
- 1/2 cup chopped oats
- 1/3 cup almond milk
Preheat your oven to 375° F.
Mix first the oat-rice flour, flax-seed meal, salt, brown sugar and white sugar together in a food processor or blender. Then mix with the raisins, oil, chopped oats, and almond milk. Mix the dough until light and fluffy. Form a tablespoon size scoop of dough into cookie shapes, and then place on a buttered cookie sheet. Bake for 6 minutes and allow to cool 5 minutes before serving. (Times may vary by oven)
