  • 4 cups of oat-rice flour
  • 2 tablespoons yeast
  • 1 1/2 cups warm water
  • 1/4 cup peanut oil
  • 1/2 cup tapioca flour
  • 2 teaspoons flax-seed meal
  • 1 teaspoon salt
  • 1/4 teaspoon coco powder
  • 4 eggs

Start by combining the yeast and water, and let it sit for a few minutes. Add in the oil, flax-seed meal, the tapioca flour, and the oat-rice flour. Then beat all of the ingredients until they are fully combined. Add the salt, coco powder, and the eggs into the mixture. Then beat the mixture for a few minutes until fluffy.

Pour the mixture into a well greased 10 inch loaf pan and allow to rise for about 45 minutes until it has doubled in size. Meanwhile, preheat the oven to 350ºF. Cut a few slits in the top of the risen loaf with a serrated knife. Garnish with oats on top if you like. Bake for about 45 minutes (ovens vary). Set aside to cool at least 5 minutes before cutting.
