  • 4 cups of oat-rice flour
  • 2 tablespoons yeast
  • 1 1/2 cups warm water
  • 1/4 cup peanut oil
  • 1/2 cup tapioca flour
  • 2 teaspoons flax-seed meal
  • 1 teaspoon salt
  • 1/4 teaspoon coco powder
  • 4 eggs

Start by combining the yeast and water, and let it sit for a few minutes. Add in the oil, flax-seed meal, the tapioca flour, and the oat-rice flour. Then beat all of the ingredients until they are fully combined. Add the salt, coco powder, and the eggs into the mixture. Then beat the mixture for a few minutes until fluffy.

Pour the mixture into a well greased 10 inch loaf pan and allow to rise for about 45 minutes until it has doubled in size. Meanwhile, preheat the oven to 350ºF. Cut a few slits in the top of the risen loaf with a serrated knife. Garnish with oats on top if you like. Bake for about 45 minutes (ovens vary). Set aside to cool at least 5 minutes before cutting.

For gluten free people, this bread is where it’s at! It is a fun and simple recipe that you can make for the whole family. Perfect for Sunday dinners and other special occasions. Although, you might not want to make it too often, if you don’t want guests over everyday!
